Well, Henckel's for example had a 14 steps of hollowing between zero and the maximum, you can see it in the wiki. I'm not sure which number corresponds to say 1/4 hollow, 1/2 hollow, or 3/4 hollow...

I'd like add to the options a fameback - stiff as a wedge, but weight is more like a hollow.
Or try sheffield steel in some hollow way, or may be american steel which will likely be hollow too....
