A very mildly abrasive polish should not take off the markings. It is very very slowly removing metal, so if you go by hand you'll be able to see if there is anything bad happening to the markings...

If very light staining I have one suggestion that may help. I have used it to remove stains on high carbon steel used for food. Nothing as damaging as bleach, so your results may differ.

You have to refinish the surface of the steel and work your way back to a polished surface. Boiling bleach etches the steal.
