Is it possible to just put some tape over the blade and sand down what I can without having to home it again? Then maybe in a few months sand the part I missed and rehone it?

You mean selectively sand bits other than near the edge ? Yes you can & some tape over the edge will be helpful.

Personally I'd be worried about putting tape over the cutting edge of the razor. I'd be worried about a) doing something in the process of taping/tape removal to nick/dull the blade b) leaving any adhesive residue behind to coat the cutting edge or the bevel that would impair the performance of the razor.

I'd make sure the blade was chemically clean of the vinegar and shave with it until it needed a honing. Then I'd go about sanding and cleaning it up. MHO

    a) Of course care must be exercised but a slight brush with any abrasive will ruin the edge & as the OP seems keen to clean up his razor covering the edge with tape is just a bit of insurance against that.
    b) any adhesive residue comes off easily with most solvents.

I'd also prefer to do it in one session when it needed a honing

An hour well spent. Now for that gunk near the edge
