My question is what side of the paddle do I put the paste on? The paddle have one rough and hard side and the other side is a soft.

    According to the description write-up

The two leather surfaces provided are intended specifically for sharpening and maintaining your razor's edge. The special roughened leather surfaces are perfect for holding the abrasive material in sharpening pastes that actually does the work of sharpening. The two leather surfaces are colored differently so that you can differentiate different grades of sharpening paste.
Either leather surface will work, although if you can match the paste colour to the leather colour it will make it easier in the long run, so green paste on green leather, red on red etc. although if the leather colour does not match either paste then just use whichever you wish provided you remember which grade is on which colour to avoid contamination. If this is the case, I would personally put the higher grade paste (green) on the harder side. Although I have no real practical reason for this.
