Welcome to SRP. Generally cut throat razors refers to open blade straight razors. Also known as barber's razors. What you describe is a DE (double edge) razor. That is what Derby makes blades for. Some vendors sell blade sampler packs. What one person may prefer in a blade varies by the individual. My personal favorite is the Feather. It is the sharpest as far as I'm concerned. Check out the beginner's guide in the SRP library here. You'll find a lot of good info on all things shaving.

Peraso pre shave oil and soap are good. Distiled witch hazel and alum block are best for razor burn. I suggest a blade sampler pack to see which one you prefer.

Irritation, burn, is many times caused by too much pressure. Check out this tutorial here. Might help. A blade sampler pack is the way to go to find the blade that is best for you. For me the sharper blades are better but that is not true for everyone.

Those are rough to get good shaves out of. Break the blade in half and insert it into the holder right ? Not surprised you're getting irritation. Those blades are designed to be used in double edge razors that have a head that gives the very thin blade support. It is like shaving with a straight razor in terms of ergonomics of the hand but it is not at all like shaving with a true straight razor where the blade meets the face. We have a new 'Shavette" forum. Post in there and maybe some guys can give you something to go with.

I've had one like that and it shaves well enough for being such a cheap design...+1 on watch your pressure and angle. Derby blades came with mine too...they do the job. I didn't keep it long enough to try an iridium blade (you can try those if you want a really smooth blade that's still sharp) in it because I gave it to my brother to get him into wet shaving. I just used it a couple times and was kind of impressed...keep in mind that I haven't used any other shavettes before, just straights, and was also expecting it to be junk. So with that in mind, it's not junk, but I'd imagine that it's not the best like Jimmy said. It's also kind of a pain to load the blade properly.
It's definitely good enough to give you a taste at least.
